Carrot Fry - #SimpleFry

Here's a simple recipe you can follow to make tasty Carrot fry. The hardest part of all is cutting carrot into small pieces. If you are done with that, you are half way through to make the curry.


Ingredients:
  1. Carrots - 6
  2. Oil - 3 tsps
  3. Mustard Seeds
  4. Cumin Seeds
  5. Hing
  6. Garlic clove - 2
  7. Dry Red Chilli - 2
  8. Chana Dal - 1/2 tsp
  9. Green Chilli - 3
  10. Curry Leaves
  11. Turmeric - a pinch
  12. Salt
  13. Chilli Powder - 1/2 tsp
  14. Coriander Leaves
Preparation (30min)
  1. Wash Carrots and take off the peal. Remove ends and cut them into small pieces and set aside
  2. Take Pan and add oil to it. When the oil is heated, add mustard seed and wait till they splutter
  3. Then add Cumin seeds, hing and crushed garlic cloves to the pan. Garlic is good for health and adds taste to the dish
  4. Now add Chana Dal, dry red chilies, curry leaves and green chilli to the pan. Wait for a minute till they are fried
  5. Now add chopped carrot pieces and mix them with the ingredients. Now add turmeric powder.
  6. Fry it for 6-7 min and add salt
  7. Fry it again for about 10 min while mixing the ingredients intermittently to fry evenly
  8. Now add chilli powder and mix the ingredients
  9. Add coriander leaves and turn off the flame
Yummy Carrot fry is ready. It can be served with roti or rice. The same recipe can be followed to make Potato fry and Okra fry.

Chicken Fry #NonVegCurry

Chicken Fry is one of my favorites in non-veg dishes. This process takes time but doesn't take a lot of effort. This is best to try on weekends as we get ample time on weekends compared to weekdays.


Ingredients:
  1. Chicken - 500g
  2. Oil - 6 tsps
  3. Onions - 2
  4. Green Chilli - 3
  5. Ginger garlic Paste - 1 tsp
  6. Turmeric - 1/4 tsp
  7. Garam Masala - 1/2 tsp
  8. Salt
  9. Chilli Powder - 1tsp
  10. Curry Leaves
  11. Coriander Leaves
Preparation (45 min- 1 hour)
  1. Wash Chicken and cut them into small pieces and set them aside
  2. Chop Onions into big pieces and coarsely grind them in a mixer. ( Do not make smooth paste)
  3. Take Pan and add oil to it. When the oil is heated, add onion paste to it and let it mix well in the oil
  4. Add Ginger garlic paste, turmeric, curry leaves and green chilli to the pan. Wait for 2 min and then add chopped chicken pieces to them.
  5. Fry it for 3 min and add salt. Now put lid on the pan and let it cook for about 10 min. Check in between and mix all the ingredients thoroughly so the chicken is cooked evenly.
  6. Once the chicken is cooked, take off the lid and add 1/4 tsp of garam masala at this stage.
  7. Now fry the chicken without lid for about 10 min while mixing it intermittently. You will see the chicken piece hardens as it gets fried.
  8. Now add chilli powder and remaining 1/4 tsp of  garam masala and let it fry till the gravy turns to thick brown color.
  9. Add coriander leaves and turn off the flame

Squeeze lemon on the curry and yummy chicken fry is ready to serve!!! 

Tomato Pappu - #SimpleCurry

Tomato Pappu is the simplest of all and takes very less effort to cook. When I am tired and have no energy to cook, this is the first thing that comes to my mind.





Ingredients:

  1. Tur Dal - 1 Cup
  2. Tomatoes - 3
  3. Onions - 1
  4. Green Chilli -2
  5. Mustard Seeds
  6. Jeera Seeds
  7. Hing
  8. Salt
  9. Curry Leaves
  10. Red Chilli - 2
  11. Tamarind Paste - 3/4 tsp
  12. Coriander
Preparation: (Time 30 min)
  1. Take 1 cup of Tur Dal in a pressure cooker and wash it thoroughly.
  2. Add chopped Onions, Tomatoes, Green Chilli to Tur Dal and add 2 cups of water.
  3. Wait for 5-6 whistles on medium flame. 
  4. Wait for 2 minutes till the pressure cooker cools down
  5. Remove the lid and place it on a stove to simmer. Add water if required.
  6. Now add tamarind paste, salt to dal and let it cook
  7. Simultaneously take a pan and pour 3 tsps of oil and let it heat
  8. Add mustard seeds and let them splutter. Now add Turmeric, Jeera Seeds and Hing
  9. Add Curry leaves and red Chilli  and turn off the flame once they are fried
  10. Let it cool for a minute and add all these ingredients to dal. At this stage add chopped coriander leaves to dal.
  11. Thoroughly mix all the ingredients and put off the stove.

Cake - #Simlpledessert

After searching through the internet, this is the easiest recipe I have found. It takes minimal effort and tastes great!



Ingredients:

  1. All purpose Flour - 2 Cups
  2. Baking Powder - 2 tsps
  3. Salt - 1/2 tsp
  4. Baking Soda - a Pinch
  5. Eggs - 3
  6. Butter - 1/2 Cup
  7. Milk - 3/4 Cup
  8. Sugar - 1 Cup
Preparation:
  1. Mix all purpose flour, baking powder, baking soda and salt in a big bowl
  2. In a mixer jar add eggs, butter, Sugar and milk. Turn on mixer for 4 min.
  3. Now pour this into the bowl and mix all the ingredients well without lumps.
  4. Take baking plates and grease them with butter and a thin line of all purpose flour over butter
  5. Pre-heat the oven to 180°C. This is important to bake the cake evenly
  6. Now pour the mixture into the baking plate. Make sure to fill the plate to less than three quarters of its volume, leaving enough room for the cake to expand and rise as it bakes.
  7. Leave it in the oven for 20-25 min until it turns to nice golden brown color
  8. Take it out from the oven and let it cool. After cooling down, check with knife if the cake is done. If not, bake it for additional 5 min
You can add any essence of your choice to add extra taste to the cake. But this is basic cake that is easy to bake and tastes great!

Lemon Rice - #Simpledish

One of the simplest Indian Rice dish you can make!






Ingredients:
  1. Rice - 2 Cups
  2. Lemon - 2
  3. Turmeric - 1tsp
  4. Oil - 3 tsp
  5. Mustard Seeds - 1/4 tsp
  6. Chana Dal
  7. Ground Nuts 
  8. Red Chilli - 3
  9. Green Chilli - 3
  10. Curry Leaves
Preparation: (Time 30 min)
  1. Take 2 cups of rice and wash it. Add 4 cups of water and cook it in a pressure/electric cooker. (If pressure cooker wait for 3 whistles)
  2. Once the rice is cooked, spread the cooked rice in a bowl to cool it down
  3. Add Salt to the rice and mix it well
  4. Now take a pan and pour 3 tsps of oil and let it heat
  5. Add mustard seeds and let them splutter. Now add Turmeric, Ground Nuts, Chana dal and fry them till they turn golden.
  6. Add Green Chilli and Curry leaves and wait till they are fried
  7. Add red Chilli and turn off the flame once they are fried
  8. Let it cool for a minute and add all these ingredients to the rice.
  9. Now add lemon juice (squeezed from 2 lemons) to the rice and mix them thoroughly.
  10. Wait for a minute to let rice absorb. Now taste and add salt & lemon juice as per your palate.
Yummy Lemon Rice with crispy Chana dal and Ground Nuts is ready! Curd goes very well with lemon rice and adds taste to the dish.
